RECIPE: Radish Cake/Turnip Cake 萝卜糕

My family loves to eat Dim Sum. We will order Radish Cake whenever we are out for Dim Sum. We also called this savory cake ‘Lo Bak Go’ in Cantonese and often served during Chinese New Year on the second day for lunch or snacks.

It is worth of making it at home because we are able to choose good quality of ingredients such as Chinese Sausage, Dried Flower Mushroom, Dried Scallops, Dried Shrimps and Radish.

As most radish are bitter (especially Japanese Daikon), it is best to cook the radish with some yellow rock sugar to neutralise the bitter and sweetness of the vegetable.

For those who like to try , here is the recipe :
1 medium radish (550gm -700gm after grated)
250gm water
(You can use chicken broth or the water that you soaked the dried shrimp, dried scallop & dried mushroom)
1 Chinese sausage (cut into small cubes)
4 gloves chopped garlic
6 chopped shallots
3 nos dried flower mushroom
3tbsp dried shrimp
4 nos dried scalops
1/2 tsp white pepper

Rinse dried shrimp, dried scallop and dried mushroom and soak in warm water for 2 hours. One item in individual bowl.
Drain out the water and keep it for later use.
Chopped dried shrimp into smaller pieces.
Cut dried mushroom into small cubes.
Separate dried scallop with fork or you may use your fingers to shred apart the scallops.

In a mixing bowl, combine rice flour, salt and 250gm water. Mix well with wooden spoon, set aside.

Wash the radish and trim away top and bottom part. Use a peeler to peel the radish. Use a grater peeler or grater box to grate the radish. Set aside.

Heat 1tsp of oil in a wok / frying pan over medium heat. Add grated radish, white pepper, rock sugar and 50gm water. Let it cook about 10-15 minutes until the radish turned tender and translucent. Pour into a big strainer and press out all the water. Make sure the radish is dry if not the radish cake will be very soft and wet. Set aside.

In the same wok, add 1tsp of oil over medium heat. Add in Chinese sausage and fry till fragrant, then add in garlic, shallots, dried shrimp, dried scallop and continue to cook for 2 minutes. Last add in dried mushroom and cook for 1 minute. Pour onto a plate and set aside.

Add the cooked ingredients and radish into flour batter. Mix well and transfer to a lightly grease cooking oil in 2lbs loaf pan or 7×7 inch square baking pan. Using a spatula to smooth the top of radish cake.

Place the pan into a steamer and steam for 50 minutes over medium heat.
Insert a chopstick to test the cake if done. If it come out clean, then it is ready.

Set aside and let it cool completely. Wrap with the cling wrap and refrigerate for at least 4 hours before cutting it.

To serve:
Cut the radish into pieces. Pan frying them with some oil and garnished with fried shallots, sliced chilli and chopped spring onion.

Fried Radish Cake / Chai Tao Kway 菜头粿

Fried radish cake is one of the famouse street food in Malaysia and Singapore. We eat it for breakfast, lunch or as a tea break. Fried radish cake prepared in 2 versions , fried with dark black sweet soy sauce or plain.

For 2 -3 persons
300gm Cooked Radish Cake
2 gloves chopped garlic
3 nos eggs, lightly beaten
2 tbsp chopped sweet preserved turnip
2 tbsp chopped salty preserved turnip
1 tbsp cooking oil
White Pepper for taste
1 tbsp dark sweet soy sauce (you may omit dark sauce if making plain fried radish)
Some chopped spring onion, coriander, sliced chilli for garnish.

Cut steamed radish cake into small cubes.

Heat some oil in a frying pan over medium high heat. Add in radish cake and cook till lightly brown. Add garlic and preserved radish, fry till fragrant.

Add dark sweet soy sauce and white pepper. Stir to ensure radish cake coat the dark sauce evenly.

Pour in lightly beaten eggs over the radish cake and let it cook for 1 minute. Do not stir the radish cake. Flip it over to cook for another 1 minute and it’s done.

Transfer to a plate and garnished with fried shallot, chopped spring onion, coriander and sliced chilli.
